Lemongrass has a variety of uses and beneficial properties. I have been growing my own for some time now in my backyard. The main uses I have for it are tea and salad dressings.

The clippings I use for compost and additionally there ends up being a very beautiful aroma in my house. There is not much of a financial investment on my part and I help the planet by reducing the carbon footprint. Instead of buying lemongrass from the grocery store, where it has been imported from California, I just walk out to my backyard and clip as much as I need.

To make lemongrass salad dressing:

1.     Trim the ends of the lemongrass stalk and remove the outside layers
2.     Mince the lemongrass
3.     Add oil, vinegar, ginger, garlic
4.     Add any salt, pepper, or spices you desire
5.     Shake/stir well

Let the dressing sit for at least 30-60 minutes, to allow the flavors to marinate.

If you’re ever in need of lemongrass, or would like to try it out, please send me an email and I would be happy to provide you with a lemongrass shoot so that you can start your own.
