The clippings I use for compost and additionally there ends up being a very beautiful aroma in my house. There is not much of a financial investment on my part and I help the planet by reducing the carbon footprint. Instead of buying lemongrass from the grocery store, where it has been imported from California, I just walk out to my backyard and clip as much as I need.
To make lemongrass salad dressing:
1. Trim the ends of the lemongrass stalk and remove the outside layers
2. Mince the lemongrass
3. Add oil, vinegar, ginger, garlic
4. Add any salt, pepper, or spices you desire
5. Shake/stir well
Let the dressing sit for at least 30-60 minutes, to allow the flavors to marinate.
